Discover the heart of Indian cooking in this hands-on class where you’ll learn how to prepare a versatile Indian curry base—the flavorful gravy used to create countless Indian dishes and comforting lentil soups (dal). This foundational technique will give you the confidence to recreate authentic Indian meals at home and adapt them to your own taste.
During this class, we’ll explore the essential building blocks of Indian cuisine. You’ll learn how different spices work together to create depth and aroma, why seasonal vegetables and lentils play an important role in traditional cooking, and how small adjustments can transform a dish to suit your preferences. We’ll also cover techniques such as marinating and blending curries with different ingredients to create balanced, rich flavors.
Together, we’ll prepare a delicious meal using fresh ingredients and traditional spices, creating a rich curry base that can be used in many different dishes. Our curry will include green peas and your choice of paneer (Indian cottage cheese) or potatoes and will be served with rice, naan bread, or both. Plain yogurt will also be available as an optional accompaniment.
At the end of the class, you’ll enjoy the meal we’ve prepared together and leave with a printed recipe card so you can recreate the curry base at home. For safety and allergy awareness, all ingredients will be listed for students to review ahead of time.
